“Shiizakana” was also a term originating from tea ceremony dishes, but now it is also used for Kaiseki courses. The underlying meaning is, “We insist you have another Zakana (appetizer)”. You may see it referred to as “Susumezakana”. It refers to Takiawase of seasonal vegetables and fish or poultry and Aemono (chopped fish, shell-fish and vegetables in various dressings).
